That minestrone looks great! I am Italy at the moment so i really should seek some out - it is my favourite soup so I should try it here.
I have such a hard time cooking quinoa!!! It always comes out too wet, and bland. any suggestions?
Maybe you used a bit too much water/stock. Generally, the good quinoa water ratio is 1:2, that is, for 1 cup of quinoa, use 2 cups of water or broth. You should get perfectly good fluffy quinoa. Quinoa cooks rather fast, about 15 minutes it should all be done. You should see quinoa grains puffed up and looking full and round. For a more flavorful quinoa dish, you can usually start with some onion+garlic or leek/green onion+ginger as a base, add in uncooked quinoa and any spice mix you like (depending on what type of cuisine you like), sort of saute everything for 1 minute or 2, and then just pour in the water or stock and cook for another 10-12 minutes. Wow, you lucky girl!!! I've never been to Italy. I really would love to go there some day. I only made it as far as to southern France. What a pity! I really hope you enjoy some great minestrone in Italy. Show us some photos! At least I can enjoy some Italian food vicariously. Have fun there!
